How UniFi Talk works in Australia
UniFi Talk is Ubiquiti's phone application on a UniFi gateway or console. In the United States and Canada, Ubiquiti sells calling plans directly. In Australia those plans are not available, so a UniFi Talk deployment uses Talk Relay to connect the G3 phones to a third-party SIP provider or PBX. That works, but it means you still need an Australian VoIP provider, and the feature set is what UniFi Talk supports rather than the provider's full platform.
